Do you know how to perfectly sear a steak?


In our continued efforts to keep your culinary exploration as simplistic and as easy to understand as possible let's address the all important sear. Searing a steak provides that beautiful look, but it goes way beyond the aesthetics. Not too mention many proteins, whether pan-fried or grilled, require the all important sear. Simple explanation of searing is this. Searing brings added depth and complexity of flavors out of the steak or scallops otherwise, would be missed. As far as if searing locks in the moisture, well I'll stay out of that contentious point.

We have all heard to get the perfect sear, get your pan or grill as hot as you can. If cooking in a pan then add some oil and in some cases butter and wait until it just begins to smoke. Or cooking on your grill then some will have you heat the grates until they look like a lava flow. Let the sizzling begin...right? Well yes, but there is a more fool proof method.

Using a high-quality extra virgin olive oil like from Texas Angel Oil will give you an advantage. Not all extra virgin olive oils are the same in not only the taste and texture but in cooking performance. Texas Angel Oil was born in the BBQ capital of the world in the great state of Texas. Guadalupe Co. BBQ Competition Team Simple Grilled Ribeye Recipe

Ingredients:
Texas Angel Oil extra virgin olive oil
Texas Black Gold -Garlic Sea Salt
Uncle Bob's Country Seasonings- Garlic Onion Pepper Blend.
Pick your favorite ribeye steaks the more marbling the better , 1 1/2" cut steaks or thicker are ideal.

Preparation:
Cover the steaks lightly with Texas Angel Oil extra virgin olive oil on both sides this is a binder for your seasonings and neutralizes the acidity of the meat to allow your seasonings to permeate the meat.
( a thick piece of beef can stand up to the sea salt )
Season generously on both sides with Texas Black Gold Garlic Sea Salt and Uncle Bob's Country Seasonings Garlic Pepper Blend.
Ideally let rest 10 mins or longer to help infuse flavor (Can even refrigerate overnight).

Cooking:
Heat grill to 500-550 degrees and lay steaks on the grill, 30 seconds per side for the sear. Reduce heat to 400 degrees
About 2.5 -3 mins per side should get us to 135 med rare.

Optional: Hit it lightly with another dose of Texas Angel Oil extra virgin olive oil on one side for enhanced flavor.

Simple explanation of Olive Oil types



That delicious recipe your favorite chef shared that you're ready to prepare to impress your friends and family calls for, “Olive Oil”.  Simple right?  That is until you get to your local market and get kicked in the face with the endless choices of olive oil. Can't all the olive oil people just agree on 1 type of olive oil? Does somebody think that it's funny to make this many choices? Forget it, I'll just drink wine and tell my friends to bring dinner!  Don't let this be you and by all means enjoy some wine, but let me see if I can simplify this issue for you.
Olive oil both simplified and explained:
Extra Virgin Olive Oil: Extra-virgin olive oil is an unrefined oil and the highest-quality olive oil you can buy. A great way to think of this oil is if you were to pick an olive off the tree yourself and squeeze the olive in your hand. The pure oil that would come out of the olive is the extra virgin olive oil. In this pure form extra virgin olive oil retains truer olive taste, and has a lower level of oleic acid than other olive oil types. It also contains more of the natural vitamins and minerals found in olives. 
Side note: (I only cook with extra virgin olive oil)
Virgin Olive Oil: (This definition is debated among olive orchards, so I will provide the International Olive Council definition) Next in quality is virgin olive oil. It's made using a similar process as extra-virgin olive oil and is also an unrefined oil, meaning chemicals or heat are not used to extract oil from the fruit. Virgin olive oil also maintains the purity and taste of the olive, though production standards are not as rigid. Virgin olive oil can have a slightly higher level of oleic acid. It also has a slightly less intense flavor than extra-virgin olive oil.
Side note: (Make extra virgin olive oil at your orchard or go sell books door to door)
All other oils from here on out are refined by some process of the manufacturer.
Pure/Regular Olive Oil or just Olive Oil: This oil is typically a blend of extra virgin or virgin olive oil and refined olive oil (heat and/or chemicals are used in the process of extracting oil and removing flaws from the fruit). This olive oil is a lower-quality oil than extra-virgin olive oil, with a lighter color, and a more neutral flavor.
Side note: (I find the extra virgin olive oil used in this blend is often from old batches of extra virgin olive oil that has lost most of its flavor)
Light or Lite Olive Oil: "Light" or “Lite” doesn't refer to this olive oil being lower in calories. Rather, it is a marketing term used to describe the oil's lighter flavor. Often times this oil is the most heavily refined and/or blended with other oil types like sunflower or canola oil.
Side note: (Instead of buying this oil just punch yourself in the face)
Extra virgin olive oil can come in many colors and I would urge you to not get too hung up on the color alone.  My Texas Angel Oil extra virgin olive oil is a nice vibrant green when it's fresh pressed and over a period of months, it turns to a lighter green with golden hues coming through.  I've experienced and produced some fresh extra virgin olive oils that are golden in color, but I lean towards the fresh greenish color that dominates real extra virgin olive oil.  Check with your local or regional family owned olive orchard for the best option for you in selecting your olive oil.

The mistake you made in not using extra virgin olive oil




I use 500ml – 16.9 FL oz. of fresh premium Texas Angel Oil extra virgin olive oil (EVOO) every two weeks on average.  After enough surprised reactions from home chefs as to how much extra virgin olive oil I use I thought it only prudent to discuss this further.

Aside from the well-known fact that real extra virgin olive oil is extremely healthy for you with countless supporting studies confirming this from the likes of the Mayo Clinic and others.  This flavorful alkaline food is a must for almost any cooking you are doing.  No, it's not just for salads to be used as some drizzle over the top and please stop asking what salad is my favorite.  I've hated salad my entire life and if you love salad, then more power to you.  Luckily I medically have a reason to avoid salad due to an enzyme in green leafy vegetables not being good for your intestines.  At least it's an issue for me after an injury from my Navy time leaving me with a very “interesting” diet and part of how Texas Angel Oil came to be.  Although my Texas Angel Oil extra virgin olive oil is the ultimate topper for salads understand that is only scratching the surface of the thousands, if not millions of uses.

Areas you are missing out on to up your cooking game, including grilling:

-EGGS; No matter how you cook them, eggs and olive oil were a marriage made in heaven. Skip the milk for scrambled eggs and use olive oil as an example.  Sunny side up is much sunnier when cooked in extra virgin olive oil.

-Pan fry fresh fish; Use 50% EVOO and 50% Sweet cream butter with some fresh minced garlic, sea salt, pepper, and fresh lime or lemon juice when plating.  Simple, awesome, and your taste in fish will jump to a new level.  Coming soon is my newest flavor; Texas Angel Oil Caribbean Lime extra virgin olive oil - perfect for fish.

-Marinating; Did you know EVOO is an alkaline food and helps to counteract the natural acidity of beef to bring out the natural flavors of the meat and enhance the flavors of your selected seasonings used.  Did I mention that EVOO makes a great binding agent, even with rubs, to help infuse the seasonings into the beef?. Now you know.

-Perfect Sear for a steak ( the same principle applies to the perfect low & slow brisket); EVOO has a relatively low burn point and some can find this challenging to cook with.  However, the advantage some miss is that EVOO heats up extremely quickly.  The outside of your meat coated in EVOO will heat even quicker for that all important Sear so sought after by top chefs and backyard grilling warriors.

-Finisher on any protein; Make fish tacos and when you've plated them try some fresh lime or lemon juice and EVOO as the final touch.  You can thank me later.

-Make leftovers great again;  That perfect steak or leftover brisket is now 4 days old in the refrigerator and you know you have to heat it up which is only going to cook it past the perfection point.  Heat it up and hit it with EVOO and don't kiss me for this great tip.

A Texas legend.........I don't think so!

Created especially for the Lone Survivor Foundation silent auction

TexasAngel Oil came to be by several factors. God with a capital “G” first and foremost, but also with the support of family and friends. I actually dreamed of being a chef for many years and thus I shouldn't be surprised for now through Texas Angel Oil I provide to the world one of the greatest extra virgin olive oils available on the planet. I have been successful and I have successfully failed, but even in the success, there is something different with Texas Angel Oil. My poor grammatical skills and limited understanding of the English language could never convey what exactly is different with Texas Angel Oil. So I'll just give credit where I know it is due without explanation. Thank you, God. This Texas man is just doing his best every day with my two incredible kids and a great team working behind the scenes to make this all possible.

This past weekend a very special blend of Texas Angel Oil extra virgin olive oil was created and donated to the Lone Survivor Foundation Houston gala 2016 silent auction. The case auctioned off to the highest bidder for an impressive $1,380.00. The Lone Survivor Foundation will undoubtedly put the money to good use helping our veterans. After my Navy time, it's hard to express how important it is to me to support my fellow veterans who have given so much to our country. Even more important to me is to support the SEALs after an injury in Coronado California during my Navy time changed my career path to what is now Texas Angel Oil.

This wasn't any case of olive oil, but 12 bottles all of which were professionally glass etched with the Lone Survivor Foundation logo on one side and a very special Texas Angel Oil logo on the other. The bottles needed housing and thus a custom wooden box made of Alder wood and hand forged metal handles with insignia were expertly crafted. All members who participated in the project donated their time, expertise, materials, and dedication free of charge. More so everyone on the team had little or no direction other than to make something special and something special is what they made. I didn't really search the team members out they were simply put in my path on this journey through life. The right men at the right time and it was an honor to work with them. In full disclosure, one is my brother from the Navy sweating and bleeding the same ground in Coronado that I did and ironically he endured almost the same career ending injury. Of course a very big thank you to both my children who worked countless hours behind the scenes.  I love you both.

I used to be willing to put my culinary skills up against anyone's and luckily after a few years under my belt, I realize how little I actually know. Announcing Texas Angel Oil sponsorship of Food Networks Guadalupe BBQ Co. Competition Team

BBQ in Texas is almost in the category of being a religion and rightfully so considering the amount of time and investment made by so many. However, it is only a select few that rise to the international stardom level and one of these young guns just so happens to be the son of an old school friend of mine in Seguin Texas. 13 year old Ty Machado of the venerable Guadalupe BBQ Co. Competition Team is proudly representing Texas on a world stage in this first season of the Kids BBQ Championship on the Food Network.

Ty spent years with his father, Joey Machado, traveling to holy sites in Texas known as BBQ cookoffs honing his skills and winning enough awards to catch the Food Networks attention. Unfortunately, Ty did not win the championship and take home the $20,000.00 grand prize and get featured in the Food Network magazine. 2nd for Ty's chicken and 7th overall out of 53 top level competitors is something I know all of Texas is very proud of. I will say that I feel partly to blame that Ty did not win the ultimate prize for at the time of his competition on the Food Network Ty was not using Texas Angel Oil extra virgin olive oil for his marinades. I will eternally hang my head in shame for not getting Texas Angel Oil to Ty in time for the Food Network show that began airing this past May. However, both Joey and Ty have Texas Angel Oil in their arsenal at this time for their growing BBQ competitions and TV appearances. I'm partly kidding on it being my fault and while yes they have fresh Texas Angel Oil available to them now and we all know the right fresh ingredients can make or break some dishes. It's the pitmaster skills honed over time that separate the weekend grill master from the sought out title of BBQ pitmaster. Ty has forever earned this title through his own hard work. More so I am unable to express enough as to how honored I am to know his father and I think we can all learn something from this father and son duo about parenting.

There are many different directions I thought about taking this post, but ultimately I hoped and hope to not take away from Ty's accomplishments. As a proud father myself of both my 2 children, Sinjin & Skyla, I can only imagine how proud Joey is of his son Ty. I think it's highly important for all us to share our love, knowledge, and involve our children in every aspect.

The United States Navy man in me salutes Joey & Ty Machado. The Texan in me tips my hat to Joey & Ty Machado. The father in me is inspired by Joey & Ty Machado.

Happy July 4th or Independence Day #2 for us. -By Skyla



As I sit here in Cypress Texas wondering how I was blessed enough to be in the only state in the U.S. that celebrates Independence Day twice I wonder what I did.  Do I just have the favor of God?  Is my ego just out of control?  I am my father's daughter after all and I know he posted in the past about having to keep his considerable ego in check.  OK I'm getting off topic this Fourth of July post, we need to talk about Fourth of July stuff.  I now realize that most people don't know the true story about Fourth of July or how it came to be.  So how about a short "made up" story on it.  It all started in England when a bunch of people realized that they did not have enough hot dogs.  So these lovers of the dog wahoo'd some ships landed in the America's and thus began the great Hot Dog war.  It was a short war since England discovered that my dad will put sauerkraut on his hot dog.  Nobody on earth likes or is able to eat sauerkraut other than my dad and so the great Hot Dog war ended. My dad was a soldier and apparently his training allowed him to endure cruel and unusual punishments like eating sauerkraut.  How is it that the dad who came up the with the special blend of 4 types of olives to make our perfect Texas Angel Oil extra virgin olive oil have any taste buds left after eating sauerkraut.

We my never know.

You need to follow this rule to select the right Olive Oil!



Here at Texas Angel Oil we are often asked about the intricacies of an olive orchard and what exactly is the number 1 thing to look for in selecting a great extra virgin olive oil. Cutting through the noise and varying view points on this debated subject and utterly ignoring the intended use for your olive oil and we find only one answer summarized in the following simple 3 rules.

Rules for buying the right extra virgin olive oil:

1- Buy Fresh

2- Buy Fresh

3- Buy Fresh

Any extra virgin olive oil you select most likely at one point had an optimal freshness date with a sublime taste worthy of any kitchen. The best olive oils in the world lose their stature over time and this alone is part of the reason many store bought olive oils can taste similar with enough age. "I couldn't tell a difference in olive oil until I tried Texas Angel Oil."- this is common for us to hear this from our customers. To a fully trained palate of an olive oil expert who becomes one with the olive and makes slurping sounds while drinking olive oil will choke on this post, but oh well. Who really drinks olive oil by the way and who in the hell came up with the way self proclaimed olive oil "experts" taste olive oil? Dip your finger in it and taste, or sop some up with some fresh artisan bread, drizzle on a fresh salad, saute some sea bass, or marinate a nice brisket and you will know if it's good. Sorry...I drifted way off topic.

We are hypocrites for the next part of this post! I strongly urge you to look for "born on", "pressed on", or some other type of dating on your olive oil bottle to determine when the olive oil was made to determine it's freshness. Fresh being the name of the game in extra virgin olive oil and the fresher the better is a key fundamental to getting a good/great extra virgin olive oil. We are such a small orchard selling out our inventory after each pressing we (DON'T) have dating on our bottles. Now you know the reason for the hypocrite statement and I'm sure other small olive orchards have the same challenges we do in labeling with dating on each bottle. With that being said you can reach out to your preferred olive oil maker and ask them when their current batch was pressed. With larger olive oil companies who easily can provide dating on each bottle I would build a wary eye if you only see best by dates and no manufacturing dates. Olive oil made in the past 1-6 months is ideal, but olive oil as old as a year properly handled can be worthy of any meal you intend. Texas Angel Oil extra virgin olive oil is typically sold within 3 months of pressing, but can retain it's medium to full robust flavor ideal for all cooking types up to 9 months. Picking on Texas Angel Oil in this example, Texas Angel Oil can still be used up to 2 years after pressing with proper handling and storage. However, once you open your Texas Angel Oil extra virgin olive oil bottle we strongly recommend you use it within 60 days.

Interesting tips for olive oil use (no genius required)


Texas Angel Oil extra virgin olive oil is a high quality fresh pressed (2 stage for those who know what that means) olive oil for premium consumption.  For the quality you get with Texas Angel Oil the price is extremely economical.  No not everyone can purchase Texas Angel Oil today due to pricing and product availability.  With that being said we wanted to share some more off beat olive oil uses for that "lesser" olive oil and for those who have gold plated toilets and enjoy finding more uses for Texas Angel Oil.

  • Polish wood furniture: dab a small amount of olive oil on a rag with some lemon juice and you have a fresh scented cleaning polish. 
  • Shine brass and stainless steel: dab a small amount of olive oil on a rag and wipe away streaks and tarnish.
  • Oil squeaky hinges: Apply directly or use a q-tip to apply to that annoying door hing and problem is solved.
  • Polish shoes: You guessed it, just a dab on a rag and wipe your shoes to maintain that brilliant shine.
  • Leather conditioner: Apply olive oil generously to leather and let it sit for 45 minutes and then wipe away any excess. 
  • Stuck zipper: Olive oil has you covered, just dab some on a q-tip and wipe on zipper front and back and problem solved.
  • Remove paint: Rub olive oil on skin and let soak for a couple minutes then rinse with soap and water.

Olive oil is an excellent natural lubricant with many amazing uses both in and out of the kitchen.  The list of nontraditional uses is endless and growing.  We will share some of these tips we both find very useful and have used ourselves.  God bless!

Flavored extra virgin olive oil is all wrong

Apple infused Texas Angel Oil extra virgin olive oil the EVOOs model. Just to be clear this is not real and this is solely meant in jest. However, the photo was taken with my iPhone 6s and I had a random Apple sticker laying around I stuck onto the bottle. Outside of that Apple sticker there is no flavoring or network connectivity.
I actually was going to put something about chocolate olive oil or bacon flavored olive oil, but it turns out those are real flavors. Can't say that I've tried them and I'll continue experimenting with flavors like rosemary, lemon, basil, garlic, jalapeno, chipotle, habanero, garlic, and sriracha. All come with dangers and challenges like, "Botulism".
Botulism, technical name Clostridium botulinum, are bacteria spores that can spread in certain foods when not exposed to oxygen. Fresh extra virgin olive oil does not like oxygen and hence a challenge begins for mass production.
You can avoid botulism with olive oil by heating it and yet again another problem with flavoring olive oil due to fresh olive oil quickly breaking down with heat.
So let's refrigerate it and you get…well you guessed it that yet another problem is confronted with the cooler tempratures damaging the subtle flavors of fresh high quality olive oil.
What to do? At this time I am making no flavored olive oils for mass consumption, but they will be coming when I'm confident quality will not be impacted and the product can be assured safe.
In the meantime you can flavor your own, but I strongly recommend you only flavor small bottles of olive oil and plan to use or discard any unused products within 14 days.

Know your Olive Oil-getting to the basics by CWK

Getting to the basics of extra virgin olive oil did you know olive oil is made from the olive "fruit"?  Many oils are made from seeds.

- The Mediterranean region currently produces about 94% of the world's olive oil.  Spain leading the pack in producing an estimated half of the worlds olive oil supply.  The U.S. is producing less than 1% of the world's olive oil and the numbers on Texas olive oil production compared to the world almost don't register in percentages.

-Extra Virgin Olive Oil is made without any heat or chemicals, while plain olive oil is a blend of some extra virgin olive and refined olive oil.  Hence the latter has the bland flavor, but unfortunately many think olive oil in general is bland.

-Light or Extra Light olive oil is in reference to the flavor and not the fat or calorie count.  If only my mom knew this one growing up and I might have tried real extra virgin olive oil at a much younger age.  If you like oily goo with no flavor then definitely buy light or extra light olive oil.  For the love of God please don't!

-Extra virgin olive oil is actually not an indicator of the flavor or quality.  With many differing colors of extra virgin olive oil the color alone is not enough to pick the right one.  Extra virgin olive oil is best fresh and with that I encourage you to try Texas Angel Oil.  If you don't try my olive oil there are many incredible producing olive orchards in the U.S., try some of them and you will be shocked.

Funny when you build a company and layout the various pieces as to how
jumbled items can become once you move to execution. Reminds me of a
quote from Helmuth Karl Bernhard Graf von Moltke, "no plan of operations

hostile force". I have often thrown business plans out the window and
even retooled businesses into completely new verticals. Texas Angel Oil

So our neighbors throughout south central Texas are literally flooding.
The photos are in front of my home in Cypress, including my awesome
redneck neighbor riding through the flood to check on people. More rain
comes today and my great plan of posting about how the Texas Angel Oil
extra virgin olive oil blend of Arbequina, Coratina, Leccino, and Picual
Texas grown olives came to be. My plan did not survive contact with the
enemy so to speak.
